Whenever we go anywhere I’ll always ask “can I bring anything?”
Ooo you’re brownies!!
Picnics, dinner parties, the polo, afternoon tea, baby showers, hen parties they have made an appearance at them all!
And I really can’t take any credit. They are the easiest things to bake and use all ingredients which are usually in the cupboard (no funny business!) There is nothing that annoys me more than recipes that you’ve got to hunt round several specialist supermarkets to get the ingredients. Simple but effective… That’s me!
So these brownies…
You can have them plain, with nuts, with biscuit bits, with choc chunks & anything else you fancy BUT they always take quite kindly to a white chocolate drizzle once cut!!

100g Cocoa Powder (I use Cadbury’s Bournville)
500g Golden Caster Sugar
4 Free Range Eggs
100g Self Raising Flour
100g White Chocolate (for the drizzle)
(Any extras you fancy)
Preheat oven to 180oC
Butter and line your tin with parchment paper, or I use a square silicone tray which I just line with stork
Melt butter, cocoa powder and sugar in a large saucepan, stirring mixture
Once fully melted, cool slightly and add the eggs little by little, always stirring
Followed by the flour, again stirring until the mixture is smooth
Tip into your tin
(If you wish to add nuts stir into the mixture, if you wish to add chocolate chunks, drop on top of mixture once in the tin)
Place it on the middle shelf of your oven and bake for 30 mins, keeping an eye on it.
You may need to bake for a further 10 mins, I always use a cake tester and like a cake once it removes clean, its ready!
Allow to cool in the tin/tray on a cooling rack
Only remove once cool and then cut into your desired shape.
Melt the white chocolate and drizzle across
Cuppa in hand and taste!
