Banana Cake

Ok, so this isn’t a healthy recipe I’m afraid just another super easy tasty one, which is perfect for when you have those damn bananas left over that are going browner by the second!!

Banana cake is one of my favourites as it reminds me of travelling in Australia – I practically lived on it for months!

So here we go – moist deliciousness.

140g Stork

140g Caster Sugar

140g Self-raising Sugar

2 Large Free Range Eggs

1tsp Baking Powder

2 Very Ripe Bananas (mashed)

4 squares of Dark Chocolate (optional)


Pre heat oven to 180 oC

Butter & line a loaf tin with parchment paper

Cream the butter & sugar

Slowly add the eggs (whisked)

Little by little fold in the flour & baking powder

Finally stir in your mashed bananas

Pour into your tin  & bake for approx 30 mins – until your cake tester will remove from the cake clean.

Once cooked and cooled, melt the dark chocolate and drizzle over the top.

Kettle on, cuppa made and enjoy a slice!
